Sweet Potato Casserole

Sweet Potato Casserole                  8 servings


5 sweet potatoes, peeled  
and sliced   
∏ cup packed brown sugar
π cup butter
2 Tbsp orange juice
2 pinches cinnamon
1 (10.5 oz) package mini marshmallows


1)    Preheat oven to 350 degrees
2)    Boil sliced sweet potatoes until tender. Drain.
3)    In a large bowl, blend the potatoes until creamy. Stir in the butter, Brown sugar, orange juice and cinnamon.
4)    Spread the sweet potato mixture into a 9X13 inch pan. Sprinkle the mini marshmallows over the top and bake until golden.
